A few questions on poetry?

these stupid questions, but....

why don't poems rhyme?

if wanted write rhyming poem, okay switch rhyme scheme , other structure such syllables stanza stanza?

if wrote poem no rhyme scheme, still rhyme here , there or "sloppy" using rhyme schemes stanzas?

okay have generous use of line breaks or make poem choppy?

different types of poetry such sonnets , haikus used subjects (such love or nature) or anything?
